2 lb. lamb roast
2 cups water
1/2 tsp. garlic powder
1/2 tsp. dried rosemary
1/2 tsp. dried sage
1/4 tsp. ground black pepper
1/2 tsp. salt
1 stalk of celery, diced
4 carrots, quartered
6 small potatoes, quartered
1 medium onion, sliced
  1. Place roast, water, and seasonings (garlic, rosemary, sage, pepper, and salt) into a large heavy pan. Cover pan tightly and simmer until nearly tender.
  2. Add vegetables (celery, carrots, potatoes, and onion) and cook (simmer) with roast until all vegetables are tender and roast reaches minimum internal temperature of 145 degrees F.
