Oatmeal Pancakes

1½ cups nonfat milk
1 cup dry oatmeal
¼ cup oil
2 eggs, beaten
1 cup flour
2 Tbsp. sugar
1 Tbsp. baking powder
1 tsp. salt
  1. Combine milk and dry oatmeal in a medium bowl. Let stand 5 minutes.
  2. Add oil and eggs to the milk and oatmeal. Mix well.
  3. Mix together flour, sugar, baking powder, and salt in a separate bowl. Stir flour mixture into oatmeal mixture until just moistened.
  4. Cook pancakes in greased skillet over low-medium heat until lightly browned on both sides.

1. Top with fruit to add sweetness without the extra sugar in syrups!
