Grilled Vegetables in Foil Packets

3 cups vegetable chunks/slices
2 Tablespoons cooking oil
1 teaspoon Italian seasoning
1/2 teaspoon garlic powder
 Salt and pepper, to taste
  1. Place vegetables into bowl. Add oil and toss.
  2. Add remaining ingredients and toss.
  3. Place seasoned vegetables in an aluminum pan or on aluminum foil. Cover aluminum pan with aluminum foil.
  4. Poke holes in the foil so vegetables have a grilled flavor. It is best to cook vegetables over indirect heat to prevent burning.
  5. Gas grills that have multiple burners-- turn on one side of the grill and place vegetables away from direct flame. For grills with coals, push coals to one side and vegetables to the other.
  6. Close grill lid. Cook for about 15 minutes, longer for firm vegetables and less time for soft vegetables.
  7. Refrigerate leftovers.

 Use Italian salad dressing in place of oil and seasonings
