Recipe of the Week

A toasty warm bowl of soup is a treat at the end of the day when it is cold outside! This recipe can use items you may already have in your pantry at home. This soup is practical and comforting, making it a win-win at mealtime!

Potato Soup -- Makes 4 servings

• 3 medium potatoes
• 4 cups reduced sodium chicken broth
• 1/2 cup cooked ham, chopped
• 1 cup nonfat dry milk powder
• 1/2 cup onion, chopped
• 1/2 cup canned corn, drained and rinsed

1. Wash potatoes and peel.
2. Cut potatoes into 1-inch cubes. Place in large pot.
3. Add broth to pan and bring to boil. Partially cover pot with lid and simmer 20 minutes or until potatoes are tender but not mushy.
4. Add ham, dry milk powder, onion, and corn to the pot.
5. Bring to a boil. Reduce heat and simmer for 5 minutes.
6. Serve hot.

Do you have any other veggies in your pantry at home? Try adding them in! Green beans, peas, and carrots are all great options to add to this soup.

Nutrition Facts (per serving): 250 calories, 2.5 g fat, 550 mg sodium, 39 g total carbohydrate, 4 g fiber, 17 g protein
