Caitlin Huth.

Caitlin Huth came to University of Illinois Extension in 2012 serving DeWitt, Macon, and Piatt counties as a Nutrition and Wellness Educator. Her primary responsibility is to help community members gain the knowledge, skills, and tools to live healthier, more nutritious lifestyles. This includes delivery of evidenced-based nutrition education programming on heart health, diabetes, food safety, food preservation, and food purchasing and cooking.

Huth has a Bachelor of Science degree in Family and Consumer Sciences (Food, Nutrition, and Dietetics) from Illinois State University. She completed her Master of Science degree in Family and Consumer Sciences (Dietetics) through Eastern Illinois University and dietetic internship through Sarah Bush Lincoln Health Center (Matton, IL). Huth is a member of the Academy of Nutrition and Dietetics and Illinois Extension Association of Family and Consumer Sciences and a Registered Dietitian.

Program Offerings

Chronic Disease

Meals for a Healthy Heart

  • 2-part class focusing on heart health, including discussion of risk factors for coronary heart disease, heart healthy foods, menu planning, physical activity and fitness, and weight management.
  • Food demonstrations, tastings, and related recipes are provided.

I on Diabetes

  • 4-part class focusing on prevention and management of diabetes, including discussion of treatment goals, self-monitoring, food choices and meal planning, managing carbohydrates, fat, and portions of other nutrients, and reading food labels.
  • Food demonstrations, tastings, and related recipes are provided.

Food Safety

Illinois Department of Public Health: Food Service Sanitation Manager Certification Course

  • 8-hour training and exam to meet requirements for the State of Illinois for the Food Service Managers Certification.
  • As required by the IDPH Food Sanitation Code, food establishments must be under supervision of a certified food service sanitation manager. This program addresses topics including foodborne pathogens, employee and personal hygiene, safe food handling, preparation, service, and storage, pest management, and Hazards Analysis Critical Control Point (HACCP).

Yes! You Can:  Preserving Safely


  • Learn to preserve at home or refresh your skills on canning freezing, and dehydration.  Hands-on canning classes are offered as well.
