Peterson is a native of Minnesota and is a graduate of South Dakota State University, Brookings, SD, with a Bachelor of Science in Nutrition and Food Science, and a minor in Food Safety, and a Master of Science in Nutrition, Exercise, and Food Science specialized in Nutritional Sciences.
Peterson states, “I’m so happy to be starting a new adventure here in Illinois and hope to begin offering courses on understanding serving sizes, fad diets and why they fail, diabetes, healthy eating at any age, and proper food preservation. I also look forward to teaching kids about the importance of eating healthy and being active, and hope to offer camps and other programs associated with nutrition and wellness.”
Peterson had the opportunity to work with South Dakota State University in creating the Food Safety Scientist Virtual Labs and Curriculum, which teaches students basic scientific techniques while exposing them to careers in food safety and agriculture. She also developed content for the pH virtual labs and the Water Activity labs in collaboration with North Dakota State University and New Mexico State University along with the curriculum which includes hands-on activities for kids from middle school to high school. They were created for Science, Family and Consumer Sciences courses to get kids excited about food safety and agricultural related careers. Peterson became interested in the field of nutrition and wellness when her older sister was diagnosed with Type One Diabetes. That experience kindled in her an interest in dietary issues and a desire to make a difference in the lives of others through nutrition. Food is one of her major passions whether it is culinary, nutrition, or food safety, and she enjoys doing research and investigating changes in the field of nutrition.
