I planted pin, red and chinkapin oak 5 years ago to sell. They are now ready to sell and I need to prune them to shape them before showing them. I know that November is the best time to prune - but can I prune the oak trees now (mid-August)?

You can, but I would wait until dormant season for several reasons: (1) oak wilt, and (2) translocation of nutrients from the leaves back into the tree. The latter is especially important due to last year's drought!
