I noticed a couple of places Elm is mentioned as atapable tree. I know that Maples, walnut, birch, and elder make a decent syrup, but what about elm? I can't seem to imagine that thay have a good flavor.

Any hardwood species can technically be tapped for syrup. However, that does not mean every species will produce a high quality syrup mean't for your pancakes and waffles. Everyone has different tastes, so feel free to experiment w/ different tree species -- variety is the spice of life!
