Topping live oak

Recent purchase of a home in North Carolina barrier island has severely topped live oak trees in order to improve view of golf coarse and ocean for previous owners. Several trees that were topped are 6 to 15 in diameter and after topping are about 15 feet tall. They are now sprouting out from the top many small limbs and difficult to tell how to manage these trees now in order to establish main trunk. I would like to help them grow like the trees they were intended to be; but need help deciding what to do. Thanks, BC
