We purchased two pots of impatients and they are kept in light shade, however, they are both severely wilted now and I am wondering if it is okay to cut them back to the stems and if they will grow back?

It depends on what caused them to wilt. Wilting may be due to under watering, overwatering or root disease. If they just need more water, cutting them back and giving them water should get them to grow again. If the problem is too much water or a root disease, they may not come back.
