Our landscapers recently cut a large shrubs middle out and left the outside of the shrub. Like it was gutted. Why is this done?

there is a pruning technique called renewal pruning where the older branches are removed to the soil/crown line to encourage new growth from that area. Later as that new growth matures a bit, the remaining "older" growth is removed leaving a brand new shrub. this is what is done in Illinois. Contact your local Extension Office and see if this is appropriate for your plants. There are shrubs that grow very well in SC that would not survive our winters.
