Yellowing of leaves on artichoke plants can be due to many things - among them anything that is stressing the plant. But it could also be something more serious like verticillium wilt or insects. Without proper identification of the problem, it's hard to give any recommendation of treatment. If the problem persists, you might want to consult with a local garden center or your local extension service office.
