deadheading usually refers to the process of removing old faded flowers, usually from perennials and flowering shrubs. I'm not aware of this being done on trees. If you mean removing dead wood, that can be done anytime to maintain the health of the tree. However, if you mean topping, that is a practice that is usually avoided as it ruins the shape of the tree and results in a witches broom effect.
